Pineapple Fluff Pie
Beat the heat with this creamy & delicious no bake pie. Only a few ingredients to make, a couple hours in the fridge and you're ready to go

shortbread cookies or graham crackers

unsalted butter
melted

3.4 oz
box instant vanilla pudding (regular or sugar free)

can crushed pineapple
with juice

Cool Whip or Whipped Topping
divided
Instructions
Mix crushed cookies and melted butter. Press into the bottom of an 8x8 or 9x9 inch pan
Stir together pudding mix, pineapple, and half the Cool Whip. Spread evenly over crust
Top with remaining Cool Whip and more crushed cookies, if desired. Chill at least 2 hours in the fridge before serving
Stores in refrigerator covered for up to 3 days
Notes
I use a pre-made graham cracker crust, so there's no need for the butter. I also use sugar free instant vanilla pudding and sugar free Cool Whip
