Pineapple Fluff Pie

Beat the heat with this creamy & delicious no bake pie. Only a few ingredients to make, a couple hours in the fridge and you're ready to go

Ingredients
  

  • 10 oz shortbread cookies or graham crackers
  • 8 tbsp unsalted butter melted
  • 1 3.4 oz box instant vanilla pudding (regular or sugar free)
  • 20 oz can crushed pineapple with juice
  • 8 oz Cool Whip or Whipped Topping divided

Instructions
 

  • Mix crushed cookies and melted butter. Press into the bottom of an 8×8 or 9×9 inch pan
  • Stir together pudding mix, pineapple, and half the Cool Whip. Spread evenly over crust
  • Top with remaining Cool Whip and more crushed cookies, if desired. Chill at least 2 hours in the fridge before serving
  • Stores in refrigerator covered for up to 3 days

Notes

I use a pre-made graham cracker crust, so there’s no need for the butter. I also use sugar free instant vanilla pudding and sugar free Cool Whip
